✨ Pesto Potato Salad ✨ Day 3 of 10 days of my Easy Salad Recipes 👩🏼‍🍳 Ingredients: * 1 kg baby potatoes * 150g bacon (10 rashers) * 125g thick mayonnaise * 125g sour cream * 60g pesto * 50g sun-dried tomatoes, chopped * Basil to garnish Method: 1. Fry bacon until crispy. Once cooled, chop into small pieces. 2. Boil potatoes until just cooked through. 3. Drain potatoes then add sour cream, mayo, pesto and sun-dried tomatoes to the saucepan. Add half of the bacon then mix everything together. 4

✨ Spring Pesto Pasta Salad ✨ Day 9 of 10 days of my Easy Salad Recipes 👩🏼‍🍳 Ingredients: * 500g pasta spirals * 1 cup frozen peas * ½ cup lite mayonnaise * 1 x 135g Pesto Dip - Basil Cashew & Parmesan * 1 Tbsp lemon juice * 200g cherry tomatoes, halved * 1 spring onion, finely sliced * Zest of 1 lemon * Fresh basil leaves, to garnish Method: 1. ✨ Bacon, Asparagus & Orzo Salad✨ Day 5 of 10 days of my Easy Salad Recipes 👩🏼‍🍳 Ingredients: * 400g risoni / orzo * 1 bunch asparagus * 250g streaky bacon * 100g baby spinach * 200g cherry tomatoes * 2 avocados, diced * 2 spring onions, sliced * 50g pine nuts, toasted * 50g fresh parmesan shavings (optional) DRESSING * 50g pesto * 50ml olive oil Method: 1. Cook risoni according to packet instructions. 2. Slice each asparagus stem into three pieces and then boil until just cooked. 3. Grill bac
