First attempt at making pastrami beef ribs. They sat in the brine for 7 days, hit the smoker for 8 hours after that, and here’s the result. Overall, I’m very happy with how they turned out. Super flavorful, tender, smokey, beefy, everything you want in a beef rib. They were borderline too salty, though. So next time I’ll try the brine for 5 days and see if that changes anything.
