Sep 29, 2009 · Glad you weren't put off. Talk to me before you start buying more Wusthof. Wusties are wonderful knives in their own way, very tough, with excellent handles and outstanding fit, finish and good-looks. But there are any number of better handling knives which take and keep a sharper edge for the same or less money.

Jul 20, 2006 · Maybe you don't need a set, but just a few good knives. Forschner is a brand used by many restuarants. Good quality but not expensive. Of course, there are many fine, very high quality knives from Japan, Germany, etc. But, they are much more expensive. Some people say they only need two knives- a chef's knive 8 to 10 inches and a paring knife.

Tojiro DP or Fujiwara FKM for home cook (+sharpening stones)
Feb 26, 2013 · I'm a home cook and both knives will be a major upgrade from anything I have used before (like Masterclass or Berghoff Now the Tojiro uses a "sandwich" of metals having a hard metal in the middle and a softer one at the sides while Fujiwara is a one piece steel.

Nov 19, 2009 · Miyabi knives, available in metallurgical powder or VG-10 (which Henckles calls "CMV-60") are currently Henckles' highest quality and most expensive offerings. The Miyabi knives seem to have German level fit and finish, which is a good thing. Lousy cosmetics, though. I imiagine Miyabi is Henckles attempt to meet and beat Shun, and Wusthof Ikon too.
