Alternative Replacement Water Pan for 18.5" WSM

May 23, 2017 · I stopped using water years ago. Instead, I made a "Piedmont Pan"* from a Brinkmann charcoal pan I already had, and the Weber water pan (the old-style, shallow one). The two pans are separated by an air gap of about 1 inch at the top, and I don't put anything in the pan (I do line it with foil for easier clean-up).

Mar 30, 2019 · Guys, I may have found a pan that will work for some of the 18.5" WSM units. Especially those who have the older unit and did the Brinkmann charcoal pan mod to double their water capacity. Mine is a 2005 model and the Brinkmann or Piedmont mod was popular before Weber increased the stock water pan size in the 2009 and forward models.

Apr 22, 2020 · I agree mainly with what Glen W said except that I haven't used water in the pan once during my 8 or so smokes. I foil a 14" clay saucer and set it on top of the water pan. By using the minion method and shutting down the vents to about 10% when she reaches 200*, I have no problem maintaining 225-240 at the lid.

Sep 25, 2020 · Brinkmann water pan is too small for this WSM. It's the Brinkmann charcoal pan that fits and they're getting hard to find. Yes, if you're not cooking on the bottom grate, you can place any wide, shallow pan down there to create an indirect cooking setup, to catch drippings, for water during cooking, etc.

Jul 26, 2020 · For the 22.5" WSM, Weber repurposed the lid from the 18.5" Weber kettle as a water pan. Its shallow profile is similar to the pre-2008 WSM 18.5" water pan and it hold 3 gallons of water. For the 14.5" WSM introduced in Fall 2013 for the 2014 model year, Weber made a small water pan using a part similar to the bowl from the discontinued Weber Torch.

Aug 17, 2009 · The 12.5" fit nicely into the foiled water pans for my Weber smokers which are a WSM and a Jumbo Joe with a Pro Q WSM stacker mod. 1 16 fit nicely into the bottom of my Pro Q excell 20 pan. The other I placed on top of a WSM 18" charcoal ring and then I dropped it into an 18" Old Smokey grill.
