Easiest are obviously the short stories and novellas, but putting those aside and ignoring the ones you've already read and also taking easy and hard not being reflective of quality: Easy: Salem's Lot, straightforward modern day Dracula with lots of spooks and gore.

Look at the titles of the chapters. Flip through and see if there are any illustrations or maps. Study the front and back cover.
