Dec 31, 2016 · I read that Kölsch was fermented under pressure by some breweries, and so that's what I've done with K-97. I pitched the yeast around 80F, and let it cool down to 72F overnight in my basement, which is about 68F. It fermented vigorously under pressure (about 10-15 psi), and dropped from 72 to 68 degrees over the first few days.

Jun 4, 2006 · It gives subtle esters. I think this yeast works amazing in hoppy beers, so I would definitely save some and have a go at it for your next project! I find this yeast to respond exceptionally to mash profiles, i.e., more fermentable in the lower range, less fermentable at the higher range, so I would not hesitate to mash an Oatmeal Stout around 156.

Jun 20, 2023 · Brewing a 1.040 beer and using a high attenuating saison yeast at lowish temperatures might also be an option. Maybe belle saision at 20oC. The beer will end up under 1.005 but will still have a decent mouthfeel as it produces a lot of glycerol. There will also be some yeast expression, not sure if it would be exactly what you are looking for.

May 29, 2018 · I never had a lag which may be due to using GoFerm and rehydrating the yeast. Fermented for 7 days and the cold crashed. Added gelatin and packaged on day 13. Got third place for light lagers and ales in The Limbo Challenge. I would say this yeast is best suited for a Cream Ale or Cali Common as it does give off some fruity esters.
