After saving the changes, I can open the pdf document using other pdf editor and I surprisingly notice that the Greek text inserted before is still there! Thus, the issue has to do with Edge ability to show Unicode characters. Please fix it.
Big Bug in Microsoft Edge for PDF Edit

In order to avoid this situation, I keep saving while I’m editing PDF and I’m sure everything is saved and showed up before I close my PDF the first time.

PDF Viewer in Edge doesn't work with checkboxes
Nov 2, 2021 · The Edge PDF Viewer gives us lots of issues with PDF documents that contain checkboxes and signature fields. Example is that you have 5 checkboxes above each other, you click the bottom one, but the top one gets checked. Same goes for the signature field, this one doesn't give you the option to sign anymore.

Apr 7, 2020 · Add "undo" feature to PDF inking so that when we accidentally erase/remove something (inking, highlight etc) we be able to undo it, also would be useful to use the "undo" feature for when we add inking so instead of using eraser we just undo the action.
