Using sous vide does a pretty good job of tenderizing tri-tip, although these "Cardiff Crack" ones they sell do not need it - I do 130* for 6.5 hours, then sear. PS. The "Cardiff Crack" nickname comes from the fact the market is in Cardiff By The Sea in north San Diego County.

In my experience, Tri-Tip is one of the most versatile cuts going. You can pretty much do anything to it and it turns out well. As others have pointed out, reverse searing works well, so does sear and indirect. Cooking all hot with frequent turns, like Churrasco is great too. We've been buying ours from a market in Cardiff by the Sea. "Cardiff Crack" is a proprietary burgundy/pepper marinated tri-tip (the rumored trick is they use a commercial vacuum sealed tumbler to infuse the meat). Apr 16, 2023 · For tri-tip I go with 130 for 2-4 hours. Less than two hours doesn’t seem to be worth it. For me 4 hours Sous vide at 130 makes a nice tri-tip. If you want to prep ahead, you can Sous vide, shock with ice water, and refrigerate a couple days until ready to sear.
