2 posts · Joined 2004. #3 · Mar 28, 2004. There are at least eight disadvantages to Cutco knives. 1)Inferior tempering. Cutco is stamped instead of forged. All best knives are forged (with the exception of Henckels Twinstar which is using a new technology called sintering) because forged knives make a better edge among other reasons.

The tip had been broken off by some type of abuse, but I easily reprofiled it and sharpened it up. It has served kitchen duty for some time, and has been one of my favorites for processing large quantities of apples or other fruits.

May 21, 2014 · Quite frankly, the Cutco knives are overpriced and only perform so-so. 1)The first is every man/woman for themselves, and as long as the knife is sharp and clean, there is no problem. Obviously the cooks take great pride in their equipment and will buy good quality stuff. 2) The second option is rentals.

Aug 29, 2007 · Cutco is WAY overpriced. Any commercially available knife will perform just as well. Restaurant supply stores usually carry a reasonably-priced line of professional knives that will equal or outperform the high dollar Cutco stuff. A Spyderco Sharpmaker will handle their (almost any) serrations w/ ease.

Cutco makes a 440 blade which remains sharp for an extended period of time due to the edge configuration.

Butcher Knife $85. Santoku Knife $94. And, for the heck of it, some smaller knives: 2 3/4" Paring Knife $42.

Except that the year was 1990, the "hourly rate" was $9.50 and they sold me a $300 stack of knives. I've since tossed the bag and lost a steak knife.

Jun 26, 2015 · 440C is significantly better in most respects, has been around for decades, and is used in knives priced much lower than Cutco's. It can be made harder as it has up to twice the carbon of 440A. Using softer steel has the advantage to the maker of not wearing our dies as fast, and Cutco knifes are stamped out.

Jun 21, 2007 · Cutco is the household cutlery brand of Alcas, in Olean NY. Alcas also now owns the Ka-Bar brand. This is a "typical" Alcas folder, made by Alcas for sale by Cutco salespersons. You will also encounter similar knives marked AURUM, made by Alcas for Aurum Etchings. There has not been a separate Ka-Bar factory since 1977.
