Dec 1, 2022 · Alitame is a dipeptide sweetener used worldwide except in the USA. It is more stable than aspartame at high temperatures and at pH values of 5–8. Thus, it is more suited for baked foods (BeMiller, 2019). It is incorporated into hot and cold beverages, tabletop sweeteners, pharmaceutical formulations, and feed for livestock.
