Pale 2-row vs. Vienna vs. Pilsner vs. Marris Otter
Mar 7, 2012 · But continental pilsner malt is a different beast entirely than 2-row, and marris otter is kind of on its own as well. I don't think you can substitute. I typically stock 2-row pale (used to do plain 2-row but i like the pale better) and german pilsner in bulk. I also keep quarter sacks of vienna and munich on hand.

Jan 5, 2013 · 2-row is the most basic brewers malt, lightly kilned to 1.5-2.0°L. Only Pilsner malt is lighter. Pale Malt is slightly darker at 3-4°L, typically. Briess 2-row ("Brewers Malt") is 1.8°L. Briess Golden Light DME is 4°SRM (=3.5°L), so about twice as dark. It contains 1% Carapils.
Can't get American 2-row, what's a good alternative?
Nov 23, 2011 · If I use 2-Row, I almost always pair it with a biscuit malt like Victory to replicate the character of a Pale malt. In reverse, if your recipe calls for 2-Row in combination with biscuit malts, you can safely substitute an English Pale Ale malt, including MO, by reducing or eliminating the biscuit malt altogether.

She also said that of course the pale malt is slightly darker than the 2 row and they could be exchanged in a recipe that 2 row is the base malt but the flavor profile would be maltier.

Jun 7, 2010 · FWIW, I would mash low (148-149) to get a high attenuation, bitter @ 60 min and add the rest of the Cascade around 2-5 minutes. The 2 row will give you a light color (5-6 SRM.) The low mash temp will let the ferment finish dry without needing corn sugar.

Oct 19, 2016 · Not necessarily the same. The ingredient for malting is definitely the same - 2 row barley. But pale ale malt is typically kilned darker during the process of malting than the maltsters standard 2-row. I think typical American 2-row base malt has color value 1.5-2.0 L whereas pale ale malts are often 3-4 L.

Aug 11, 2011 · Maris Otter is a premium 2-row malt. Usually quite a bit more expensive than regular 2-row. It will add a fuller flavor with some biscuitness to the beer. You should be able to use it where ever you would use 2-row. However it is slightly darker and will produce a darker and more flavorful beer all else being equal.

Yields a slightly higher extraction rate than 6-Row. 2-Row is well modified, smooth, and high in enzymes. A single step infusion mash will easily convert 2-Row, but a protein rest is recommended to improve clarity.

Pale Malt vs 2-row??? - Homebrew Talk
Jan 16, 2013 · The OP was asking about the difference between "Pale Malt" and 2-row, not "Pale Ale Malt" which is what is identified on the Briess worksheet as the 3.5L culpit. Pale Ale malt is a Briess-specific specialty malt, but most homebrew shops will often use the terms "pale malt" and 2-row interchangeably.
