Cover with foil and bake for 10–12 minutes, or until the salmon is cooked to your liking ... and add this to the pan. Stir in the spinach allowing it to wilt for a couple of minutes.
Add the salmon and spinach and crack one egg into each ramekin. Add a knob of butter to each ramekin and cover each ramekin with foil to make a lid. Place the ramekins in a baking tray.
